Wheat- and Dairy-Free Pancakes

I am not on a gluten-free diet, but I have a curiosity about recipes for this lifestyle. They look so delicious! The problem with trying some of them is that I don’t have the ingredients in my pantry and don’t necessarily want to buy them for a one-time trial that I may or may not like. This one, however, I just might try.

I found a video online for wheat-free/dairy-free pancakes. What in the world could that be? I checked it out, and these pancakes look really good. I can’t embed the video, so here’s the link. If you try these before I do, let me know how they taste!

2 cups brown rice flour
3 t. aluminum-free baking powder
3/4 cup rice milk
raw honey (amount not given, maybe 1/4 cup?)
2 eggs or egg substitute equivalent
canola oil (amount not given, maybe 1/4 cup?)

I wonder also about substitutions. Does the baking powder have to be aluminum-free? Will almond milk substitute for rice milk? What about using agave instead of raw honey? If I find out, I’ll let you know.
